Vegetable Curry

I’m back for another Meatless Monday recipe!

I knew I was going to come home late from kickboxing class tonight and I didn’t want to worry about cooking when I get home so I decided to use my handy-dandy Crock-Pot today…and maybe for the next few days. 😛 I started preparing our dinner in the afternoon and enjoyed the rest of the day. 🙂

Tonight’s recipe: Vegetable Curry

Ingredients:

  • 16-oz. pkg. baby carrots (I only used half)
  • 2 medium potatoes
  • 1/2 lb. fresh green beans – cut in 2-inch pieces
  • half green pepper, chopped
  • half onion, chopped
  • 1 tsp. of minced garlic
  • 15-oz. can garbanzo beans, drained (I only used half)
  • 14-oz. can crushed tomatoes
  • 2 tbsp. minute tapioca
  • 1 1/2 tsp. curry powder
  • 1 tsp. salt
  • 1 cup vegetable broth
  • chili powder – optional (we like it spicyyy!!)

I started at 2pm. 🙂

Directions:

1.) Combine all ingredients in the pot. Pour broth over vegetables and mixed well.

Easy Peasy! Dinner was ready when we got home from workout. It was perfectly cooked and tasted good! My husband and I enjoyed tonight’s dinner while watching the latest episode of Walking Dead. This show becomes less scary the more you watch it. 🙂

Overnight Breakfast Meal

My breakfast today had been waiting for me in the fridge since I prepped it last night. I call this my “overnight oats”. This is how I made it.

BTW, Lily’s is my favorite brand of peanut butter.

You can make this too in a Tupperware or bowl if you like. I just happened to finish a jar of peanut butter yesterday and thought of this as a better way to (really) finish off the few remaining bits of peanut butter in the jar.

The night before, mix

  • half cup of old-fashioned oats (yes, raw oats)
  • 6 oz. of yogurt (I used Dannon Fruit in the Bottom raspberry yogurt, yum!)
  • half a banana, mashed
  • splash of almond milk

top with:

  • diced peaches
  • sliced almonds
  • chia seeds

YUM!!! 🙂

Cover and let the mix sit in the fridge over night and enjoy it the next day for breakfast.

This would be great too when you’re in a hurry for work in the morning and have no time to prepare breakfast. You can just grab the jar from the fridge and take it out with you.

My Usual Breakfast

  • 1/2 cup of old fashioned oats
  • dash of cinnamon powder
  • half banana, mashed
  • splash of Blue Diamond almond milk
  • top with blueberries, Honey Bunches of Oats with Almonds and Chia Seeds

Hello Everyone!

Welcome to my first day of blogging. Please bear with me as I navigate this new endeavor.

I am just an ordinary girl who got off track and slowly trying to rebuild myself. I was never one for healthy eating or exercise, but I have lately developed a passion for those things. I just want this to be a well rounded blog. I plan to share anything about my life & my thoughts as I go through my journey of staying healthy & active. I’ll incorporate recipes, some of my favorite things and little bit of girly stuff (sorry guys!). I think even runner girls should still look cute, right?! 🙂 Just a reminder again that I am not an expert in any way. What worked for me might not work for you. I didn’t start out with any specific method – I JUST RAN! 🙂 I think I’m a living proof that anyone can become a runner. =)
